‘Fritada con MadurosÂ’ is a favorite dish here in Ecuador. Traditionally cooked in large bronze or copper pots and stirred with big wooden spoons. Cubes of pork meat including the fat are fried for several hours in bubbling pork lard until itÂ’s crispy on the outside.
